Oatmeal Spice Cookies with Chocolate Chips

1 ½ cups all purpose flour (spelt works nicely in this cookie)

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ teaspoon ginger


½ pound (2 sticks) butter, softened

½ cup granulated sugar

1 cup firmly packed brown sugar

2 eggs

1 teaspoon vanilla

2 cups uncooked oats (quick or old fashioned)

2 cups semi-sweet chocolate chips (can substitute butterscotch chips, dried cranberries, dried cherries, or half nuts- half chips)


  1. Heat oven to 350 degrees F
  2. In medium bowl, Combine dry ingredients (first 6) and mix well
  3. In large bowl, beat butter and sugars until creamy; add eggs and vanilla, beat well
  4. Add flour mixture to butter mixture
  5. Stir in oats and chocolate chips gradually
  6. Spoon onto cookie sheet (best on stone sheet) and bake 10-12 minutes or until light golden brown
  7. Cool 1 minute on cookie sheet, then remove
